Sweet Potato Fries with Avocado Crema

I am a french fry monster. I steal other people's fries so much that it's been turned into a verb: I'm going to french fry monster those frites right off your plate! And I'm not a fry snob either. Give me your McDonalds fries, your thick cut pommes frites, your curly fries, and of course sweet potato fries! You've got to try them. Paired of course, with my very favorite, avocado!

What's great about these sweet potato fries is that they are baked in the oven, so they are healthy and nutritious. Make sure to leave the skins on for extra vitamins and fiber and stuff.

The avocado crema is a bit like guacamole, but the Greek yogurt added to the other ingredients makes this dish filling enough to be a whole meal, instead of a side.


Sweet Potato Fries with Avocado Crema 
4 medium sweet potatoes, scrubbed clean, skins on 
2 tbsp cornstarch 
2 tbsp olive oil 
1 tsp cumin 
1 tsp paprika 
1/2 tsp cayenne 
1 tsp garlic powder 
1 avocado 
1/3 cup plain Greek yogurt 
2 cloves garlic 
1 handful cilantro, rinsed well
1 tbsp lime juice 


Preheat the oven to 400 degrees Fahrenheit. Cut your sweet potatoes into the size fries that you want. Mine were about 1/2 inch wide. Do your best to make them the same size, because that will help them cook evenly. 


Use a paper towel to make sure your fries are nice and dry, then toss them with the cornstarch. This helps to make them nice and crispy! Place them on a baking sheet and use your hands to evenly coat your fries with the olive oil and spices. Space them out a bit on the tray - if you crowd them they won't get crispy. Use two trays if you need to. Bake for 30-40 minutes, flipping once with a spatula. 


Take them out of the oven when they are brown and crispy enough for your liking. 


While the fries are in the oven, make your crema. Chop the cilantro and mince the garlic, then add them to the Greek yogurt. 


Mash in the avocado with a fork, and then season with lime juice. Stir and mash until it is well mixed, but still a bit chunky. 



Serve as soon as your fries are done cooking and french fry monster to your heart's content!

Directions:
1. Preheat the oven to 400 degrees Fahrenheit.
2. Cut sweet potatoes into 1/2 inch fries and pat dry.
3. Toss fries with cornstarch. Put them on a baking sheet and use your hands to evenly coat the fries with the olive oil and spices.
4. Space the fries evenly on the baking sheet and bake for 30-40 minutes, flipping once in the middle. 
5. Mince garlic and chop cilantro. 
6. Mix garlic, cilantro, and Greek yogurt in a bowl.
7. Use a fork to mash in avocado and lime juice. Mix well until combined but chunky. 
8. Serve fries with avocado crema immediately.
