Peanut Noodles

I found out some really interesting information about pasta recently. If you cool it and reheat it, it actually becomes a "resistant starch" - you absorb fewer calories, have less of a glucose spike, and it actually acts like a food with more fiber in it. So here's my super easy recipe for Peanut Noodles. Just don't forget to cool and reheat your pasta for healthy benefits!

Grocery list items:
Scallions
Cilantro
Dry roasted peanuts


Peanut Noodles
1 lb pasta (any shape but I had rotini)
pinch of salt
2 tbsp white miso 
2 tbsp peanut butter (any kind, I used natural) 
2 tbsp soy sauce 
1/2 tsp cayenne (or to taste) 
2 scallions, chopped 
1 handful cilantro, rinsed well and chopped 
1/4 cup peanuts, chopped (or crushed gently with a rolling pin)

Cook your pasta ahead of time so you can give it time to cool. Bring a large pot of water to a boil, and when you see bubbles, add a pinch of salt. Then add the pasta and cook until al dente (usually 8-9 minutes). Drain and place pasta in a large bowl. Cover and refrigerate until you are ready to make your meal. 
To make the sauce, mix together miso, peanut butter, soy sauce, and cayenne. Add water by tablespoons if it seems too thick. Microwave the pasta and toss with sauce. Top with peanuts, cilantro, and scallions and serve!

1/4 cup peanuts, chopped
Directions:
1. Cook pasta ahead. Bring water to a boil in a large pot, then add a pinch of salt and pasta.
2. Boil pasta until al dente (8-9 min). Remove from heat and drain, setting aside to cool in a covered bowl in the fridge.
3. Mix miso, peanut butter, soy sauce, and cayenne for sauce.
4. Add water by tablespoons if sauce seems too thick. 
5. Microwave pasta to heat, and toss with sauce.
6. Top with peanuts, cilantro, and scallions and serve.
