Here's a simple, and delicious recipe. You could probably make it on the grill, but it's also super easy to make in the oven.

One important step to make sure you don't skip, soak the skewers before you cook this. That will ensure that they don't catch on fire when you put them in the oven.
Grocery List Items:
1/2 lb frozen shrimp
1 can unsweetened coconut milk
1 large zucchini
pineapple
cilantro
Shrimp and Pineapple Skewers
1/4 cup peanut butter
3 tbsp coconut milk
1 1/2 tbsp lime juice (fresh or bottled)
2 tsp brown sugar
2 tsp soy sauce
1/2 tsp powdered ginger
sriracha, to taste
salt, to taste
2 tbsp olive oil
pinch ground cayenne
1/2 lb shrimp, de-shelled
1 large sweet onion, cut into chunks
2 cups pineapple chunks
1 zucchini, cut into bite-sized chunks
1/4 cup cilantro leaves, chopped
Preheat your oven to 500 degrees Fahrenheit. Place all ingredients up to the salt in a blender or food processor to make a sauce. Then whisk together cayenne and olive oil. You will brush this over your skewers.
To make sure your skewers cook evenly, I recommend threading the shrimp separately from your veggies, as they will need less time to cook. So make skewers with your pineapple, zucchini, and onion chunks, and other skewers with shrimp.
Brush on your olive oil/cayenne mixture, and place your skewers on a baking sheet. Shrimp skewers will need 5-8 minutes in the oven, vegetable and pineapple will need 15 or more minutes. Just check to make sure everything looks cooked well, so the shrimp should be bright pink and curled, and the vegetables should be a little brown with a some caramelization happening.
Sprinkle with cilantro and serve with peanut sauce!
