French Toast

Whoa, finally another breakfast recipe! I have to confess that when it comes to breakfast, I rarely get fancy. But sometimes, you sleep in on the weekends and then you want a real substantial meal. This is a go-to recipe that I love because it's really easy, but you can also make it when you want to impress.

Check out that maple syrup action shot. Getting fancy! This recipe is my mom's classic, so thanks for teaching me how to make it!

Grocery list items:
Any bread
vanilla extract
bananas (optional)
maple syrup (optional)

Obviously, this is a recipe you can customize to your liking. When I was a kid I put powdered sugar on top of everything, so that would make a nice addition to your French toast as well!
French Toast
2 eggs
1 tsp vanilla extract
fresh ground pepper
4 slices of bread (I used Ezekiel bread)
1 tbsp cooking butter or spray the pan

You might need to adjust the number of eggs depending on the size of your toast. Ezekiel bread comes in really little slices, so I could make a few pieces of toast with just two eggs.

Start by mixing together your eggs, vanilla, and black pepper in a bowl or shallow dish large enough to fit your bread.

Heat up a large pan - the larger the pan, the more toast you can make at once, and everyone's happy because they don't have to wait while it gets cold! Dip the toast in the egg mixture, letting it soak on both sides, but not until it's mush. The toast should still hold its shape when you pull it out of the bowl.

Pan fry your toast until golden brown, about 5 minutes for each side. But use your eyes and nose! If your pan isn't all that hot, it will take more time, but if you're making multiple batches in the same pan, it may take less time.

Now you can choose your toppings! Slices of bananas, fresh berries, or really fruit of any kind is delicious. I also put maple syrup on these. Based on your type of bread and what kind of toppings, it's easy to make this dish as healthy or indulgent as you want.

That's it! Wasn't that so easy? All the sophistication of making pancakes for breakfast but half the work. What's your favorite kind of bread to use for making French toast?
French Toast
