Bean and Kale Bowl with Tahini Sauce

I love calling a recipe a "bowl". That way, when I take stuff and mix it together, it sounds more legitimate. 


Grocery list items: 
Avocado 
Kale 
Beans 
Tahini

This recipe can be made with a variety of grains as the base. It is so delicious and super healthy. Plus avocado. Mmmmm. The tahini sauce is super versatile too, so if you have leftovers, I'm sure you will find a way to use it up.

Tahini Sauce 
4 tbsp tahini 
1 tbsp lemon juice 
1 tsp garlic powder 
2 tsp soy sauce 
water 


Stir up first 4 ingredients. Slowly add water, bit by bit, until tahini sauce is the desired consistency - like pancake batter is ideal. 

Kale and Bean Bowl 
1 cup dry grain (I used kamut here, but brown rice or quinoa works too) 
3 cups water 
1 can black beans, drained and rinsed
1 bunch kale, chopped 
1/2 tsp cayenne 
1 tsp cumin 
1 tsp paprika 
1 tsp garlic powder 
salt + pepper 
1/2 avocado 
1/4 cup shredded mozzarella 


Start by placing your grain of choice in a pan or pot and cover with water. Cook until tender. Depending on your grain, that might be 20 min to 1 hour. 
Add beans and mix well, heating thoroughly.


Stir in spices. 


Add kale. Cover and cook a little longer, until the kale is bright green. Then stir it in. 


Serve bowls individually topped with chunks of avocado, and mozzarella.

5. Cover and cook until the kale is bright green, then stir to incorporate kale.
6. Serve bowls individually topped with chunks of avocado, mozzarella, and a drizzle of tahini sauce.
