This is such an easy weeknight, one pan meal. It was even good for lunch the next day, which is a total bonus! Well, it's a bonus for me, since I love leftovers. Here's what you're going to need for your super simple dinner tonight.

Another favorite of mine chimes in on this recipe - za'atar mix! My mom gave me a big jar of it, and now I love to sprinkle it on things with Mediterranean flavors. It's basically oregano, thyme, and marjoram with some sesame seeds and salt. If you don't have za'atar, you can make it yourself with the dried spices you do have!
Shrimp with Tomatoes and Feta
1 onion, diced
3 cloves garlic, sliced lengthwise
1 tsp olive oil
20 or so grape tomatoes, halved
24 frozen shrimp, shelled, de-veined, thawed
1 tbsp lemon juice
3 oz feta cheese, diced into small cubes or crumbled
1 tsp za'atar mix
Start by sautéing your onions, garlic, and tomatoes in olive oil.
Once they start to soften, add the shrimp. Cook them well, until they are pink and opaque and curled up.
Now add the lemon juice, and stir for a minute longer.
Ready to serve! Put shrimp in a bowl and top with some feta cheese and a sprinkle of za'atar. Enjoy!
I love when the feta gets a little melty on top. This is a great meal by itself, but it would also go well over pasta or quinoa, or on top of some sautéed kale or spinach. What else could you add to this recipe?
