Cold Sesame Noodles

I don't know about you, but these were always a staple for me when ordering delivery Chinese food from around the corner. Somehow this cold dish can be just as comforting and delicious as a big bowl of warm noodles.


I used my shirataki noodles to make this recipe, but you could really use any noodles - soba or udon or even regular spaghetti if you wish!

Grocery list items:
shirataki noodles
baby carrots
grape tomatoes
scallions
fresh ginger root
hazelnuts

You can pretty much use any veggies you like in this - some fresh herbs would be good, and the original recipe calls for cucumber, but I used what I had laying around.
The sauce was so tasty, I had a hard time not just eating it straight from the mixing bowl! I think that's probably a little weird though...

Cold Sesame Noodles
1 package shirataki noodles, drained and rinsed
2 scallions, chopped
6 or so baby carrots, sliced thin
10-12 grape tomatoes, halved
1/4 cup tahini
3 tbsp rice vinegar
1 small (knuckle-sized) piece ginger root, peeled
1 heaping tbsp miso paste
2-3 tbsp soy sauce
1 tsp sesame oil
cayenne pepper, to taste
small handful hazelnuts (or any nut you prefer), chopped

This is going to be so quick and easy to make! Start with your vegetables. Do you like my tumbler in the back? Nothing to do with the recipe of course...


Drain and rinse the shirataki noodles, then microwave them for about a minute. Drain again to remove any liquid.


Now mix up the sauce. In a bowl, mix together tahini, rice vinegar, miso, sesame oil, and soy sauce. Grate the ginger using a micro planer or other fine grater and add it as well. Sprinkle cayenne pepper to make it as spicy as you like.

Stir it up!


Now place everything in a bowl - noodles, veggies, and chopped hazelnuts. Do you want to know how I chop nuts? I put them in a plastic ziplock bag and whack them with a rolling pin! Much quicker, and very little mess to clean up. Effective too!



Stir well and serve. Mmmmm....
