Avocado Potato Salad

I'm a huge fan of avocado, but not a huge fan of mayonnaise. Maybe that's why I like this potato salad so much. The first time I ever had it, my friend made it for me, and then I was hooked. It's like guacamole potato salad. So, it's delicious.

Grocery list items:
red potatoes 
cilantro 
avocado 
jalapeño (optional) 

This is such a simple recipe, but a word of caution. If you have longish nails, wear gloves when you chop your jalapeño. The capsaicin oil can get under your nails, and it takes a really long time to wash away. This is especially important if you wear contact lenses.

Avocado Potato Salad 
4-5 medium sized red potatoes 
handful cilantro 
1 jalapeño, minced (optional)
1 small onion, minced 
1 clove garlic, minced 
2 tbs lime juice 
1 avocado, diced 
salt + pepper


Start by rinsing the outside of the potatoes and chopping them into bite-sized pieces. Leave the skin on. Place the potatoes in lightly salted, boiling water and cook until fork-tender, about 10 minutes, depending on the size of your potato pieces. Remove from heat and drain. Mix in the onion, garlic, and jalapeño. 



Prepare your other ingredients, mixing in the cilantro, salt and pepper, and lime juice. Serve, if you can wait long enough to get it on the plate!
