Zucchini Pizza

Pizza is delicious. How can you make yourself some pizza fast when you get a craving? Use zucchini as the crust. These mini pizzas are super fast and easy to make, and they are tasty and nutritious too! You could make your own sauce to make them healthier, but I used jarred sauce for speed.

Grocery list items:
Shredded mozzarella cheese
3 zucchini
jar of tomato sauce (Classico brand has the least sugar!)

I can't explain it, but lately all I want to eat is zucchini. It's also called summer squash, so maybe I just want to eat it because it's summer. Whatever the reason, it's great for lots of recipes because of its mild flavor and juicy, crunchy texture! Just don't pick ones that are really big, because they get a bit bitter.

Mini Zucchini Pizzas
3 zucchini
3 tbs olive oil
salt + pepper
1/2 cup shredded mozzarella
1 cup tomato sauce

Preheat the oven to 380 degrees Fahrenheit. Slice your zucchini into thin rounds, about 1/4 inch thick. Lay them out on a baking sheet, then rub them with oil, salt, and pepper on both sides. I just dipped my finger into a measuring cup with the oil in it, then sprinkled on the salt and pepper.


Notice in this picture I used wax paper. Don't do this. For some reason I didn't learn from the Caramelized Onion Hamentaschen. Wax paper smokes when you put it in the oven. You are better off putting the zucchini rounds right on the tray, they won't stick. 
Bake the zucchini about 5 min, then remove from the oven, flip, and bake about 5 min more. 
Remove from oven, and put about 1/2 tsp of tomato sauce on each zucchini.  


Now sprinkle them with a little mozzarella cheese. 


Now turn on the broiler on your oven. Broil the zucchini pizzas until the cheese melts to your desired done-ness.


Serve in romantic candlelight and enjoy. Definitely do not stop at only four bite-size pizzas.
