Zucchini Pasta

Was there ever anything that gets you hungrier than this?


Red onions caramelizing in a pan with some fresh garlic. Smells like heaven too. Add a little of this:


And now we're talking! You can make this easy and delicious dish in under 20 minutes.

Grocery list items: 
zucchini 

Zucchini Pasta 
1/2 red onion 
2 cloves garlic
1 tbsp olive oil
2 zucchini 
salt + pepper 
cayenne
Parmesan cheese, grated 

Start by slicing the onion thin and and adding it to a pan with the oil. Sauté for a minute or so, then let it sit in the pan to caramelize. While you're waiting, mince the garlic cloves. Then you can prepare the zucchini. 
Using a vegetable peeler, make long ribbons of zucchini. This takes surprisingly little time. Peel ribbons until you can see the seeds of the zucchini, then turn and repeat. 


Add garlic to the pan and sauté until fragrant. Then add your zucchini pasta ribbons and sauté carefully until tender. Add salt, pepper, and cayenne to taste. Sprinkle parmesan cheese to individual portions, and enjoy!
