Chocolate Banana Pancakes

Pancakes are the best thing on a Saturday morning. I like them with maple syrup, but this recipe doesn't need it! I had heard about a healthy banana pancakes recipe, and then I got a little carried away. These pancakes are chocolatey, delicious, and super easy to make.

Bananas
cocoa powder
honey

I would experiment a bit more with these, since my batter came out kind of liquid-y. I wanted them to taste like LOTS of banana, but I think if I had used one less banana, they would have been a bit thicker.

Chocolate Banana Pancakes
2 bananas, very ripe
2 eggs
1 tsp baking powder
3 tbsp honey
2 tbsp cocoa powder
2 tbsp canola oil

Put the bananas in a food processor until they are thick and foamy. You could mash them with a fork, but the food processor makes it so much faster. Add the eggs, and pulse until just mixed. Then add the other ingredients and pulse again, until your batter is uniform with no lumps of baking powder.


In a pan, begin heating one tbsp canola oil. Using a quarter cup measuring cup, pour out batter into the pan to form pancakes. Cook 4 min, or until just firm enough to flip with a spatula. They will wrinkle when you flip them, but they're easy to pat back into place with a spatula.
Bonus! If they break, or are undercooked when you flip them, you can just push them into a pancake shape with the spatula and they will cook and still taste delicious (they'll just look kind of lumpy).


These are so delicious, and much healthier than a regular pancake. I bet they'd be even better with berries and whipped cream on top...
