Tofu Fries

I really love french fries. I mean, really, really love them. These are not exactly like french fries, but they are crunchy, delicious little pieces of heaven. And a bit healthier too.

Grocery list items:
Tofu
Panko (Japanese breadcrumbs. A staple in tempura)

The nice thing about these fries is that you could eat them with anything. Or, you could have them as a meal themselves. Tofu packs plenty of nutrition and protein, so they make a nice and interesting dinner. They are quick to make for a weeknight, since you don't have to peel or wash anything. Definitely healthier than french fries too, since they are not fried! Paired with a salad, and you're all set.

Tofu Fries
1 8oz block of tofu
2/3 cup panko
1 tsp garlic powder
salt
1 egg, lightly beaten

Preheat the oven to 375 degrees Fahrenheit. Prepare tofu by slicing it into your desired size for fries - I made wide-cut, but you could easily make them a little smaller. About 1/4 - 1/2 inch thick is best. Lay out tofu on paper towels, then cover with another layer of paper towels and let them sit for about 10 min. Tofu has a lot of water in it, and it's packed in water, so drying it first ensures that your fries will get crunchy on the outside.
In a bowl, mix together panko, garlic powder, and salt. You can adjust seasonings to your taste. Grease a cookie sheet and set it aside.
When your tofu is ready, dip it first in the egg, then coat it in the panko mixture. Lay it out on the cookie sheet. Bake for 10 min, flip fries over, then bake another 10 min. When they are hot and golden and crispy, they are ready.

Serve with sriracha, ketchup, or other condiments. I think there are probably endless possibilities for these. Got any good ideas?
